What is a good substitute for coconut extract!?

  • I am going to make coconut cream pie but the recipe calls for vanilla extract & coconut extract which in retrospect is fine ..more coconut flavor BUT! I went to my local grocery store and they only seemed to have imitation!! flavored.. one little bottle for $4.00!!! If I'm going to spend that money I want at least Pure Coconut extract. Anyways I have pure almond extract will that work? I also have sweetened flake coconut if I added water to it and reduced it a little can I use that liquid? It may be silly but hey I'm just thinking out loud hear. Anyway can anybody help here. I've been wanting to make this for the longest!!!

    You could try simmering flake coconut in milk/cream in your recipe, then straining it out and using the milk as necessary. The flavors you are looking for are fat-soluble, not water-soluble, so you will get a stronger coconut flavor using milk instead of water. If you want a better overall flavor you should find a recipe that uses coconut milk. You will never look back! I've linked one below that I wrote myself.
