It is the combination of the beans and the gastric juices of the tree cat that give Kopi Luwac its unique flavor and aroma.

Strictly speaking, Kopi Luwak are the undigested remains of wild beans that pass through the gut of the wild civet. There have been suggestions that people have started feeding cultivated beans to captive civets, but the true aficionados insist that only wild civets selecting their own beans with their superior sense of smell gives the true flavour. I would consider a cup some day, but $50 a cup not any time soon.
