Black Tea brewing question?
-
I went to whole foods yesterday and got this Ginger Peach Black Loose tea. They have jars of tea and you pick one and scoop how much you want into a plastic bag. So i got the tea went home and brewed it, and it was great. I loved it. So this morning I brewed some and it was still amazing. But now its night and when I brew it, it comes out lighter. Yesterday and this morning it was the color of black coffee, and just now when I brewed it, it was like red water, it was much lighter that usual. Also it didnt have much taste, and I had to add a bunch of sugar for it to taste good. So what happened to it. I left it it in the plastic bag on the counter, but everytime I closed it, I made sure to get the air out. So did the light do it? Can light really spoil tea that quickly?

Answer:
I would guess there was other tea mixed in with the black tea, or your water was not hot enough. You probably just hit a dry peach spot or something. I drink black tea daily and I've never had that problem.

No, tea doesn't spoil that fast. It doesn't really "spoil" at all, though if it's stored where light and air can get at it, it will lose flavour over time. Usually, that's weeks or months. The colour change you see could be due to several things. 1) the kind of light you're seeing it in 2) it might look different in a different colour cup 3) maybe you let it brew a little longer the first time, and stirring it a little while it's brewing also can intensify the colour 4) was the water really boiling both times? If it isn't boiling when you pour it over the tea, you can get a lot less flavour and colour. 5) make sure you preheat the cup or teapot before making the tea in it. Hot water poured into a cold container can cool down really fast and result in poorer tea.
