Vanilla extract: How many vanilla beans per cup of vodka?

  • I have some vanilla beans and would like to create vanilla extract. I read about using the beans with alcohol such as vodka, but I am not sure how many beans to use per cup of liquid; One calls for 3 per cup, another states that a minimum of 28gram beans (about 10 beans) per cup for a strong extract. I'd like a quality vanilla extract, I prefer less but top quality/great taste, than more but so-so quality. I have no idea how store bought vanilla extract compares to homemade, how strong does it taste compare to homemade, how many beans did they use to create their extract... Also, besides using the husks, do I need to scrape out the seeds and put them inside the bottle as well - will they contribute to the final extract taste as well, or can I save them to use in other recipes?

    i use 3 beans to one cup (any more is too strong, even in a drop or 2) i slice them into 2" strips but do not "open" them so they look like slice green beans? i then shake every day for a week and leave to mature i used some yesterday, fo r the first time i looked at the date, i made it 12th july this year once you make your own you will never go back to bought its a concentrated flavour, more so than bought but incredible when used, you can tell the difference i always bought very good quality extract, but even that doesnt compare i use huge fat bendy madagascan vanilla pods
