How to make french fries?

Wondering how to make homemade french fries that can be frozen and reheated later?

  • We just dug up a lot of potatoes in our garden and want to use them. Wondering if there is a way to make french fries that we can freeze and use later, like they use in restaurants and whatnot. Any suggestions helpful. Thank you!

    To do so, obtain 6-8 large IDAHO potatoes. These have a specific starch content that lends itself to frying very nicely, unless you buy organic potatoes, those don't work as well. Peel the potatoes if desired, cut into 1/4"x1/4" X 2" battonets or use a french fry cutter if you have one, (as long as they are of a consistent dimension, that is important for even cooking) placing them into cold water than has a scant amount of salt and vinegar (both should be almost imperceptable to taste). Using a large pot, like a dutch oven or similar heavy cooking vessel, preheat your oil to 275-300F <<<<<USE A THERMOMETOR FOR SAFETY'S SAKE..... nothing, and I MEAN NOTHING will burn down a house faster than a grease fire!!! >>>>>> Drain the potatoes to avoid splattering and place into the oil. Use a wire dipper or "spider" if you have one, just be careful with the hot oil. Cook until the oil stops bubbling violently. Remove and reserve the potatoes on a sheet pan with either a wire rack or news paper. Turn up the heat until the oil is no hotter than 365F Place the blanched potatoes into the hot oil and cook until golden brown, crisp and delicious!! Remove, drain on wire rack or newspaper again and season with kosher salt. This will also work with sweet potatoes and they go great with BBQ pulled pork!!! Hope this helped

The absolute best way III have found to COOK fries from raw...partially cook them in a 350dg fryer just for about 2 min. remove and cool...Heat again at 370dg till golden. If you freeze them after the first cooking...it'll be just like the one's you buy in the store...However, you can't just throw them in a bag and freeze or they'll freeze in a clump. In mass produced fry joints, they quick freeze them. You'll need to freeze them in layers probably. Like on a cookie sheet, or in a ziploc or something where they don't freeze together. A few stuck together is ok...If it's in the oven you want...then use the same temperatures for the oven...it's just gonna take a little longer...like 10-12 min at 350, then actually 425 would be best...till golden(approx. 15 min?)Experiment...if you mess a batch up, you have more!

Cut your potatoes into frys, scorch them for maybe one or two minutes in boiling water or oil but water is best. Cool then Freeze! If you want them more on the done side - Fry them as you generally would but don't cook them quite all the way. Again cool then Freeze!

usually when you make homemade french fries you fry them two separate times. Get a recipe for french fries off of www.epicurious.com and only fry the first time, drain of excess fat and freeze on a baking sheet in a single layer till frozen and then transfer to freezer bags. When you want to eat them bake at 400 for 12-15 min or until golden and crispy. YUM.

Cut into fries. Blanch (dip in boiling water for about 3-4 min) Then in and out dip into the frier quickly to seal them. Lay flat on tray to freeze then store in airtight container in freezer. Will keep for a few weeks

Yes you can do that! The trick is to "blanch" the fries in hot oil for just a min or so. Cut your fries how ever you like them, then heat oil to 350 degrees, and put fries in oil for just a min or so. take them out, let cool and freeze them. Later, when ready to use them, just fry them until golden brown, or you can even bake them in the oven. they will be crispy and delicious. Slather with Ketchup and enjoy!

the only way for you to do this is to vaccum seal them after they have been cut ....the problem is that you have to work quickly because oxygen turns them brown...another tip for helping the process is having a bowl of ice water beside you at your sink or counter and as you cut the fries submerge them in the water as this will prevent browning...then when you get enough for whatever quantity you want place into the bag and vaccum seal.....its really the only way i know...also remember that when you thaw them you have to do it without opening the bag...and of course this is with raw potatoes
