Please: How to cook Red Peppers with Italian Sausage ?

  • I have red peppers I want to cook with italian sausage.I want the peppers soft , like when you cook them filled with ground beef rice and tomato sauce in the oven and they fall apart. I do not want them to be crunchy. I will cook the sausage in a pan with water then brown them in the pan as the water evaporates. Should I or can I cook the peppers with the sausage ? Will they get soft ? Should I just put the pepperes in the oven ? If I put them in the oven do I put them in whole , then slice them up ? Can I cook them in a seperate pan with oil ? Will that soften them ? How long should I cook them to soften them ? I would like to cook them in the same pan as the sausage. Please tell me how to cook peppers. Thanks

    I brown my sausage until they are almost done and I remove it from the skillet and drain most of the grease off. I cut my peppers and Onions into long strips and saute in about a teaspoon of the dripping on medium heat until slightly bendable. I add the sausage back to skillet with peppers and onions on top and finish cooking on med low with a lid for about 5-10 minutes.

Put both the sausage and peppers in the same pan and cook with olive oil. Cook over medium low heat. about 20 minutes frequently stir the peppers. Takes about 20 min. The peppers will carmalize. I would also add onions also. That is the traditional. Don't try to rush things with a higher heat, the peppers will burn

I always just cut the sausage into bite-sized chunks and do the same with the peppers, then saute them in a little olive oil until the sausage is cooked through and the peppers are soft. Onions are good in it too, btw. Any onions will do, but I prefer sweeter varieties, like yellow ones.

Here ya go dude, wise guy style 6-8 Italian sausage links, sliced 1 large can Hunts sauce large red bell peppers 1 large onion, sliced 1/4 tsp garlic powder 1 tsp fresh or 1/2 tsp dried basil 1/2 tsp fresh or 1/4 tsp dried oregano 2-3 T olive oil 3-5 cloves garlic, whole 1/4 cayenne or jalapeno pepper, minced 1 bay leaf 1 small can mushrooms 1 T balsamic vinegar Slice the sausage into 1 1/2 inch thick slices. Core and slice the pepper, and slice the onion lengthwise, 1/2 inch thick. Finely mince the hot pepper; you may substitute dried red pepper flakes or cayenne powder. Adjust amount according to heat desired. Brown the sliced sausage in the olive oil. When the sausage is half done, add the whole cloves of garlic and allow to brown in oil, but if garlic browns too rapidly, remove to a cooler side of the pan. Crush the garlic cloves into the oil with the tines of a fork when they brown. Add the peppers, onions and cook until edges of onions begin to brown. Deglaze the pan with the balsamic vinegar. Reduce heat and add the sauce, bay leaf, and remaining ingredients. Simmer over very low heat for 30 minutes. Last 5 minutes, stir in the can of mushrooms. Adjust seasonings, adding salt and pepper to taste. Remove bay leaf and serve with portuguese pops, bulkie rolls, hoagie buns or any hearty roll with a substantial crust. For a special occasion, layer on a bit of Parmesan or mozzarella cheese and place under the broiler 2-3 minutes before serving.

After the sausage browns, remove them from the pan, add a little olive oil if needed and cook the peppers and onions in that. Sprinkle with a bit of kosher salt & pepper - some people add chopped garlic, I don't. Cook the peppers and onions over medium heat with a cover on the pan for 10 - 15 minutes. Remove the cover and keep cooking them, stirring often until they are the texture you like. I like red peppers and sweet yellow onions.

Add some water to the pan to the sausages when the water is evaporated poke holes in the sausages to let the fat out and brown them , in a separate bowl have your sliced peppers ready to add to the sausages, add to the sausages giving them a stir once in a while with a wooden spoon and keep a lid on the pot to keep the steam in this will make the pepper nice and soft , serve with crunchy Italian bread , and you can even have them for lunch inside a nice bun with some Provolone cheese , here is link enjoy the music as well .
