• i am making rocky road easter eggs for easter. yes i know its early but i dont get much time so im freezing them. apart from rocky road has any1 else got ideas for them? and recipes? any suggestions be greatly appreciated!

  Does your recipe call for peanut butter? Some call for nuts, and some call for peanut butter. If yours don't call for peanut butter, try this: 12-oz. pkg. chocolate chips 1 cup crunchy peanut butter 2 cups mini marshmallows Melt the chocolate chips in a double boiler or heavy saucepan and stir in the peanut butter until blended. Remove from the heat and fold in the marshmallows. Pour the mixture into your egg molds. Or, spread the mixture into a 9- x 13-inch greased baking pan. Cover and chill until the candy firms up (about 10 to 15 minutes). Cut into 1 1/2-inch squares. Makes 4 dozen pieces. PS: It's also good if you fold in a cup of toasted coconut when you fold in the marshmallows. Here's another good recipe: 1 (12 ounce) package chocolate chips 1 (14 ounce) can sweetened condensed milk 2 tablespoons butter 1 (10 ½ ounce) package marshmallows 1 (8 ounce) jar unsalted roasted peanuts In a saucepan combine chips, milk and butter. Heat over low heat till chips are melted. In a medium bowl combine marshmallows and nuts. Pour chip mixture over marshmallow mixture and fold. Fill molds or pour into a buttered 9X13 inch pan. Cool. You can also make white chocolate rocky road eggs: 2 lb white chocolate, chopped 1/2 cup shredded coconut 1 cup macadamia nuts, halved 9 oz white marshmallows, halved Place the chocolate in a heatproof bowl over simmering water and stir until melted and smooth. Removed from heat, then add the coconut, macadamias and marshmallows; mix to combine. Put into molds, or pour mixture into an 11 x 7 tin lined with baking paper. Refrigerate for 2 hours or until set.
