How to prepare rice and sambar?

    I don't know the easiest way to cook, but I certainly know the tastiest way to cook sambar (using sambar powder available in market, not the instant-mix). Rice... 1. A custard bowl of rice is enough for one person. Take as many bowls of rice as the number of people 2. Wash the rice off in water. 3. Add water double the quantity of the rice taken and keep it on stove on full flame 4. When the water starts over-flowing, turn the flame on simmer and keep the lid a little open to avoid further overflowing of water. 5. Depending on the quantity keep checking at regular intervals if water is still left. You can turn off the stove when you hear sound of rice getting stuck (or when you don't hear the sound of boiling water). Sambar: 1. You need 4 drumsticks, 2 normal-size carrots and around 150g of beans to make sambar for 2 people. Also soak 4-5 leaves of tamarind in water in a bowl. 2. Take a custard bowl of Yellow Pigeon Peas (Toor Dal), wash off in water. 3. Put in water three times the quantity of the Dal, into a pressure cooker. 4. Cut the beans one-inch long and add into the dal + water in the cooker and turn on to high flame on the stove. Turn it off after 3-4 whistles. 5. Meanwhile cut the carrots 1.5-inch long and a quarter inch thin. Cut the drum sticks too 2-inch long. 6. Add the chopped carrots and drum sticks into the pressure cooker along with a tomato cut into two halves. Again put it on stove on full flame and turn off after just one whistle. 7. Meanwhile, cut a small onion in long and slender slices. Cut 4-5 garlic pieces in small slices. 8. Fry the chopped onions and garlic, along with a little mustard, zeera, Karipatta, 1-2 dry red chillies, in 3-tea spoons cooking oil, until the onions turn brown. 9. Turn off the stove and immediately add 4-t spoons of sambar powder (I prefer the brand MTR), 4-t spoons of red chilli powder, 2-t spoons of coriander powder, 2-t spoons of zeera powder and the tamarind juice. mix it properly. 10. Add the fried mix into the dal and vegetable mix in the pressure cooker. Add water and salt according to your taste and turn on the gas. 11. Heat the mix for 5-minutes on full flame (don't close cooker lid) and you're ready with sambar. You can garnish it with coriander leaves.

Ingredients: 1/2 lime sized ball Tamarind 1 cup Toor Dal (or red lentils) 1/2 teaspoon Turmeric Powder 2 teaspoons oil Salt to taste 5 small dry red chilies (or to taste) 8 Curry Leaves (see note) 1 medium onion (shallots are preferable) 1/2 teaspoon mustard seeds 1/4 tsp asafoetida (optional) 1/2 teaspoon fenugreek seeds 1 large tomato 2 tablespoons sambar powder (see note) 1/4 cup chopped cilantro leaves (also known as coriander leaves) 1 cup of a vegetable of your choice like green beans, chopped carrot Directions: Soak the tamarind in 1 cup water for 20 minutes. Squeeze it out, adding water little by little to prepare 1 cup of juice. Choose a heavy cooking pot. Wash and clean the dal. Boil 2 cups of water and add the dal, turmeric powder and 1 teaspoon of oil. As the dal boils, skim off the foam and discard. Boil until the dal is soft and then mash it coarsely. If needed, add more water as it is boiling but do not let it get too watery. If you use a pressure cooker it will take about 5 minutes. In a separate pan, heat to medium and pour in the remaining oil. Once the oil is hot, add the chilies, mustard seeds, fenugreek and curry leaves and sauté for 2 minutes. Add the onion and brown lightly. Add the tamarind extract and let boil lightly until the onions are cooked. Add this mixture to the dal with asafoetida, tomato, vegetable of choice and sambar powder. Allow this to boil for 5 to 10 minutes and remove from the heat. Garnish with cilantro.
