How to make Sugar Candy?

Hi, I'm trying to find out if I can use different types of sugar (sugar sub., etc.) to make cotton candy?

  • Using a cotton candy machine - will it damage the machine if it's NOT regular sugar?? Will I get any cotton candy at all if I do change the sugar?? Pls let me know..thx.

    Sugar substitute won't work because it is the chemical structure of sugar that leads to the cotton effect. You could try fructose (fruit sugar like Sweetaddin or Fruisana) as this has a similar structure and bulk to sucrose. But heat has a slightly different effect on it - it "sets" morewhen it's used in jam, etc and becomes slightly sweeter than normal sugar too. In the end - the only other sugar I recommend you try in the machine is fructose but no guarantees
