How to make Irish Soda Bread without the buttermilk?

  • For the life of me I can not find buttermilk and Irish Soda Bread is something I really would like to make. Yeast in bread has started to affect my husband's stomach and he feels sick when he has bread that contains yeast but if he eats bread without yeast he's fine. I'd like to make it myself, just because I love that freshly baked bread smell. I bake bread by hand, no bread mixers and since he's started feeling sick when eating bread with yeast I have had to stop baking bread.

    Hi sophie, If you have time leave regular milk out of the fridge to sour overnight, use 1 tsp of lemon juice or white vinegar to 1 cup of milk (237ml) stir and leave to stand for a few hours or overnight. Some people only let it stand for about 30min and it still works. You can also use natural yogurt, same quantity as the buttermilk usually. We Irish use the buttermilk in our soda bread for 2 reasons, it gives a distinctive flavor to the bread and for leavening - the acidity of the buttermilk activates the baking soda giving rise. So really all you need to do is add a different acidic ingredient, any of the two above would be my choice because they have similar tastes of the buttermilk.
