What should I cook for my family?

  • Help please! Next week, my sister and I have to make meals (breakfast, lunch and dinner) for our whole family for two days (5 people - including us) but we have no idea what to make. We're basically doing this experiment where my sister and I cook meals for breakfast, lunch and dinner for two days to experience what it's like being my parents. What should we cook? We'd like to cook meals that are easy to make but delicious. My parents said they'll buy whatever ingredients we need but we just have to cook it. What should my sister and I make for breakfast, lunch and dinner (2 days)? Please help!! Jan xx

    Breakfast is easy: Bagels and cream cheese with fruit one day. Breakfast burritos the next. Breakfast burritos are soft flour tortillas filled with scrambled eggs and cheese and anything else you like. Lunch: Day one: Cold cut sandwiches served with a with a simple side salad. Day 2: Chicken Salad sandwiches: 1-9.75 oz can white chicken breast (1 cup) (You can use some leftover chicken from the baked chicken.) 1 tablespoon butter 1/3 cup slivered almonds 1 cup red seedless grapes 1 tablespoon dried tarragon ¼ cup mayo Fresh cracked pepper Buns Toast the almonds in the butter over medium heat. Watch them carefully because they burn quickly. Remove them when they are golden brown. Drain the almonds on a plate covered with a paper and allow them to cool. Cut the grapes in half. Drain the chicken. Mix the chicken, grapes, toasted almonds, and mayo. Top with a few grinds of black pepper. Refrigerate until ready you are ready to make the sandwiches. This really doesn't need a side. Dinner: Day One: Baked chicken, mashed potatoes, a veggie, gravy, and rolls. Baking a chicken is VERY easy. ¼ cup olive oil 3 cloves garlic, chopped 2 teaspoons sage 2 teaspoons Rosemary 2 teaspoons thyme Salt & pepper 1 teaspoon of sweet paprika ½ stick butter + ½ stick of butter An onion A roasting chicken Take the chicken out of the fridge about 30 minutes before you are going to cook it. Preheat the oven to 325° Remove the giblets from the chicken. Place the chicken in a roasting pan, breast side up. Tuck the wings under and tie the legs together with binding string to help the chicken hold its shape. (You can skip this step if you want to. It just makes the chicken pretty.) Take ½ stick of butter and rub it all over the chicken. Mix the olive oil and the herbs. Rub the mixture over the chicken. Sprinkle the chicken with S&P and paprika. Cut the onion in half and stick it inside the chicken. Cook for about 20-25 minutes per pound or until a thermometer reads 170° when inserted into the thickest part of the thigh. About half way through the cooking time baste with the remaining butter. (Do this by melting the butter and painting it all over the chicken.) Untie the legs. Allow the chicken to rest for 5-10 minutes before carving. Use brown and serve rolls, Making gravy is really hard. If you know how to do that then make gravy. If you don't then buy a jar of chicken gravy and just put a tablespoon of the juices from your chicken into the store bought gravy to make it taste homemade. Dinner Day Two: Caribbean flat bread fish sandwiches, tortilla chips, salsa Fish sandwiches: 1-1b prepared, warm breaded fish fillets (You can purchase them or make your own) 6 tablespoons Lime Chipotle Mayo (you can substitute plain mayo or salsa) ½ pint cherry tomatoes 1 ½ cups shredded lettuce 2 green onions 1 avocado 1 lime 4 flat breads (I like Toufayan) Wash the veggies. Chop and seed the tomatoes. Slice the green onions and the avocado. Slice half the lime for garnish. Warm the flat breads according to package directions. Divide the fish among the flat breads. Drizzle mayo over the fish. Divide the veggies evenly among the flat breads. Squeeze the lime over each flat bread.

One meal is a crockpot lasagna. It's so simple and easy to do. Pre boil the noodles. Brown off your ground beef. Spray the pot, layer a small amount of spaghetti sauce from the can in the bottom. Layer of noodles(usually cut in half) a layer of meat, a 1/3 layer of sauce, a 1/3 of the beef, 1/3 of the package of mozerella cheese. Do this two more times. Put on low when leaving for work in the morning and come home to lasagna. Make some garlic toast and a vegetable to go with it. Very easy and simple. Watch my show and I have more ideas. breakfast: fresh fruit salad, toast & juice, coffee & scrambled eggs OR muffins, (have on day 2 make muffins in oven while cooking dinner on day 1), yogurt ~~~ lunch: soup & sandwiches, baby carrots & dip, pudding or jello OR egg salad or tuna salad sandwiches or over a bed of baby spinach & lettuce with baby carrots, celery & pickles ~~~ dinner spaghetti with tomato sauce, salad (lettuce, tomato, cucumbers, dressing) bread & butter or garlic toast OR meatloaf (mix ground beef & ground turkey for a bit less fat) , mix vegetables & mashed potatoes OR if oyu have a crock pot make stew or chili with corn bread or biscuits

You and your sister are very nice to plan this. I hope my suggestions will help. Breakfast menu--first day: 1-get a couple cantaloupes, honey dew melons, 2 pounds seedless grapes, grapefruit and navel oranges(section them), and a jar of marashino cherries. Cube all the melons and put all the assorted fruit in a big serving or salad bowl. 2- buy a dozen bagels and some fun spreads, like honey butter, peanut butter and jelly. 3- make coffee, orange juice Breakfast menu--second day 1- 2 pounds bacon, 1 dozen eggs(for scrambling), 2 tubes of buttermilk bicuits, a couple tomatos for slicing. Coffee, orange juice and milk. Lunch menu--first day: 1- get a half dozen sub rolls and assorted 2 liter sodas 2- a pound each of deli sliced honey ham, turkey, chicken 3- one head of lettuce, two red onions, 2 large tomatos 4- a large bag of your favorite chips. dont forget condiments 5- paper plates to lessen dish washing Slice the subs into 3 inch lengths Lunch menu 2nd day: 1- soup and salad day ! ask what everyone's 3 favorite soups are and get the one that makes everybody's list. Make sure to get approximately 64 oz of the soup. Get a head of iceberg and romaine lettuce, baby spinach, baby carrots, cucumber, radishes, a red onion. Also get a loaf of Italian bread. Slice/dice the veggies and toss the salad. slice the bread, spread with a garlic butter spread and lightly toast. Dinner menu first day: homemade taco soup start this two hours before dinner ingredients: 1 pound ground beef, browned and drained 4 cans petite diced tomatos- drain. 1 can each of light red and dark red kidney beans, black beans--rinse in colander 1 can of refried beans 1 small can of chopped green chilis 3 packages of taco seasoning 2 packages of dry ranch dressing mix 1 8oz package of fine grated sharp cheddar cheese--for topping 1 8oz sour cream--for topping 1 large bag of yellow corn torilla round chips Brown ground beef and drain. In a very large pot, add all the ingredients plus 4-5 cans of water. stir well and heat to slow bubble and reduce heat and cover. Stir every 5-10 minutes. Put the cheese and sour cream in serving bowls. dinner menu 2nd day: Order Pizza...you worked hard enough and earned it ! I hope this helps.
