How should I cook mahi mahi?

  • The local market had mahi mahi on sale, so I decided to get some (I've been craving seafood for a while...lol). I am going to make Italian herb risotto and steamed broccoli to go with it...I'm just having a hard time deciding how to cook my fish. I think I want to pan sear it, but I'm not sure how to season it or if I should make a glaze. Suggestions?

    Mahi Mahi is an amazing mild fish. It's best NOT to fry this particular variety of fish. Pan seared would be great or glaze it an grill it. If you use a glaze, I recommend a Teriyaki or pineapple glaze-- those two flavors are the perfect marriage to Mahi Mahi. You can also bake Mahi. This variety of fish is very breakable... so when you cook it, make sure you are not flipping it too often or poking at it. Mahi is my favorite kabob fish. I skewer chunks of it with red onion, cherry tomatoes, pineapple chunks, and green peppers then I soak it in a Teriyaki glaze for two hours and grill until the fish is cooked. OM NOM NOM NOM

I used to do it by beating an egg, dipping the fish, then dregding in herbed bread crumbs. If you can't get the herbed bread crumbs make your own with some Italian seasoning. Then pan fry or sear the fish. The herbed crumbs would go well with the Risotto and won't hurt the Broccoli. You're making me hungry thinking about this.
