  • I'm making a cake for our St. Patrick's day party in my Foods 1 class, and of course like always, we're challenged. This time we have to use NO green food coloring. I want to make a Mint Chocolate Torte. Mint Chocolate Torte Recipe Prep: 30 min. + chilling Bake: 15 min. + cooling Yield: 14 Servings 30 15 45 Ingredients 3/4 cup baking cocoa 1/2 cup hot water 2 cups sugar 1-3/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1/4 teaspoon baking powder 1 cup milk 1/2 cup mayonnaise 2 eggs 2 teaspoons vanilla extract FILLING: 2 cups miniature marshmallows 1/4 cup milk Dash salt 1/8 to 1/4 teaspoon peppermint extract 2 to 3 drops green food coloring, optional 1 cup heavy whipping cream, whipped TOPPING: 1 cup (6 ounces) semisweet chocolate chips 1/3 cup heavy whipping cream Directions In a small bowl, combine cocoa and water until smooth; set aside. In a large bowl, combine the sugar, flour, baking soda, salt and baking powder. Add the milk, mayonnaise, eggs, vanilla and cocoa mixture; beat on medium speed for 2 minutes. Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. For filling, combine the marshmallows, milk and salt in a small saucepan; cook and stir over low heat until marshmallows are melted. Remove from the heat; stir in peppermint extract and food coloring if desired. Transfer to a bowl; refrigerate until chilled. Fold in whipped cream. Place bottom cake layer on a serving plate; spread with a third of the filling. Repeat layers twice. For topping, combine chocolate chips and cream in a small saucepan; cook and stir over low heat until chips are melted. Drizzle over top and down sides of cake. Store in the refrigerator. Yield: 14 servings. Any suggestions on what to use instead of green food coloring?

    Okay you need a natural food coloring for this assignment. Spinach is a good suggestion for a pastel green color. You might want to use mint leaves in natural form boiled to see what shade you get If you a more yellow gold-green get a green apple peels and boil them until the water turns green. Try any green leafy thing in the market or kitchen and see what color it produces.

Yellow and blue make green. If you get the little packs of food color they usually have instructions on how to make another color. If you don't find that try 3 or 4 drops of yellow and 1 drop of blue. Play with the formulation until you get the color you want. Make sure you keep track so you can make more of the color. You could also blend spinach in a blender with a bit of water. Drain the water out through a fine sieve or a coffee filter or even a paper towel. Use the green water. You may not see it in the cake base as that is chocolate. for the filling you could grind dried parsley until it is a fine powder stir that into the whipped cream. Dried spinach would also work, take the spinach you used for the green water and put it on a baking sheet and place in the oven and dry it out. Pulse the dried spinach in a processor or blender until it is a fine powder.

I had this challenge before, it was a little difficult. I know it has a distinct flavor, but a little bit of blended wheat grass should help. You could try to drown the flavor my blending mint leaved and wheat grass together. Hope this helps. Good luck!!

When I think of St. Patricks day besides green I also think of yellow,pot of gold,rainbows,lucky horseshoes. You could go with that theme. If you mean a different color I'd use blue/yellow.
