What can I use to substitute pectin in jelly?

    There is no substitute for pectin, if you want it to be exactly the same. If you don't mind a somewhat more rubbery texture, you could use gelatin. I wouldn't. You can get a relatively tasteless form of pectin by cooking down some apples, complete with peels and cores, and then straining the juice out. Apples have a great deal of their own pectin, and apple juice could substitute for water and pectin. What you'd be making would really be jalapeno flavoured apple jelly. I imagine the pepper flavour would overwhelm the apple flavour.

You can use apple cores and peelings to sub for the pectin or you can go get some pectin either the powdered or the Certo liquid to make your jelly or it will not jel.
