Does anyone know how they make the crab corn chowder at Trulucks?

  • My girlfriend and I love the crab corn chowder from the Trulucks seafood restaurant but they only serve it every once in a while. Does anyone know the recipe to it? Or does anyone know of a recipe that is very similar by personal experience? Thanks.

    Chowder is a pretty simple form of soup for seafood. It's basically a white sauce with potatoes or other vegetables. The trick is to add ingredients for the right cooking time. Corn & Crab Chowder Mix 2 tbsp of flour with 2 tbsp of oil or melted butter, over medium low heat, to form a blonde roux. Whisk in 1 cup of milk, until it thickens. Add 2 cups of fish stock or vegetable bouillon. Heat over medium-low burner to just simmer. Add 1 cup of kernel corn, canned, frozen, or cut from the cob. You can put some of this in a blender or use a hand-blender. Combine 1 sm can of drained crabmeat with bouillon & corn. Cook over medium heat, stirring gently to prevent burning. Ladle chowder into shallow dishes & top with a mixture of 1/4 cup grated parmesan & 1/2 cup Panko bread-crumbs. Garnish with chives or parsley, & finish under the broiler.
