What's the difference between Wheat bran and wheat germ, and can I substitute one for the other?
-
Baking muffins and the recipe calls for wheat bran, however after searching 3 stores the closest I could find was wheat germ. Can I sub the germ for the bran, and if so, at what ratio? Thanks in advance :)

Answer:
They are not interchangable. The bran is probably being used to add bulk and fiber. The germ has a small amount of fiber but nothing compared to the bran. The only time I see wheat bran is in the bulk bins at the store. You can substitute all-bran cereal and I would say you would have to reduce the volume by about 10% If the mixture is dry- you may need to add a small amount of extra liquid. I hope that helsp.
