    I am a former chef and use to make sorberts and ice cream in a Gelatia machine, one like the TV chefs use. The trick is like ice cream, the right amount of sugar in your syrup, if you want a flavour like lemon or raspbery a strong juice base, once it is made then it has to cold before putting it in any machine to process. For ices you want a 60-70 % syrup, by that the sugar content is 60-70% of the liquid, so a base of say 4-6 cups of liquid needs almost 2 lbs of sugar, I know that sounds like alot, but it will keep it softer and not freeze solid, plus you do lessen the taste when freezing. Once you see the machine slowing down and the colour change from bright to cloudy you kow that your getting there, once it has processed, then pack it in cartons or a tupperware bowl and freeze it for at least 2-3 hours, check it and stir it to keep it from solidifying.
