How do you make hard candy using maplesyrup and glucose in the recipe?

  • I make maple syrup at home, and I was looking for some recipies to make hard candy. I was told by a source to get glucose to make the candy, but I didn't recieve any more information after that. Please give me any help that you can. thank you.

    Simple Solution: printer friendly version INGREDIENTS 2 cups real maple syrup 1. Using a candy thermometer, in a sturdy saucepan with high sides, bring the maple syrup to a boil. 2. Turn the heat to very low and allow the syrup to continue boiling without stirring until the thermometer reads 233F. Be careful that the syrup doesn’t boil over - once maple syrup finally decides to boil, it really boils. The boiling action is mesmerizing; the syrup’s dark earthy color in such constant motion reminds us that the earth itself is constantly moving and changing, even when it appears to remain the same. 3. When the reduced syrup has reached 233F, remove it from the heat and allow to cool, still without stirring it, until the thermometer reads 110F. 4. Now it’s time to beat the reduced syrup with a wooden spoon. Beat vigorously for several minutes. (It can help to sing when you do this.) You are making a transformation take place: As you beat, the syrup gradually turns a pale caramel color and it becomes stiff enough to hold a shape. 5. Place in candy molds or form into patties on a plate or baking sheet and allow to cool completely. Then unmold and enjoy. Makes about 1 pound of candy.

This recipe uses corn syrup instead of maple, anyway I hope it helps Old-Fashioned Hard Candy 2 cups granulated sugar 1 cup water 2/3 cup light corn syrup 1 teaspoon oil flavoring* Food coloring as desired Confectioners' sugar * Oil flavoring can be purchased at drugstore or baking supply shop. Mix sugar, water and syrup until sugar is dissolved. Boil on medium heat to 300 degrees F or hard ball stage. Remove from heat. Add flavoring and food coloring and mix well. Odor will be extremely strong at this time, so prepare in well-ventilated kitchen. Pour in streams onto cookie sheet which has been very generously covered with confectioners' sugar. Make little ditches of confectioners' sugar so the candy does not spread too much. Sift more confectioners' sugar on top of candy streams. Cut with scissors into bite-size pieces as it begins to cool and outer edge will hold its shape. Do not wait until it is completely cooled, because it becomes hard and impossible to cut. Yields 1 pound.
