How To Cook A Steak?
-
okay, let me start by saying i dont have a grill. i live in a small apartment, no chance of getting a grill either, lol. my husband and i like to have a steak once in a while, but he never likes them when i cook them at home. It's not that i'm a bad cook, i'm a bit of a foodie, i cook all the time. But he says a pan fried steak is tough and dosent "taste right" I wanted to try again tonight, so i bought two very nice rib eye steaks with a nice marble on them and not too thin or thick, cut fresh from the butcher this morning. I have them in a jack daniels store bought marinade in the fridge right now, and i also invested in a "grill pan" like you see on food tv. so, i am asking if anyone has any tips for me when i cook these steaks, medium well is how we want them. thanks for any advice, best answer goes to most usefull information.

Answer:
Let the steaks stand at least an hour or two at room temperature. Room temperature is very important, this helps the steaks from becoming too tough. It is rough if the steaks are cold to have them cook evenly. The grill pan should be very very hot, on high heat. You may want to open up windows. Right before you add the streaks brush some vegetable oil lightly on the pan. Grill the steaks 3 - 4 minutes on each side. Do not touch until them until the 3 - 4 minutes is up. After they are done, let them stand 10 minutes before you cut them. This lets the juices settle back into the meat. A dab of butter with maybe garlic on top of the steaks and let that melt into the steak. Serve.

Heat up the oven as hot as it will go. Put a cast iron skillet on the stove and get it really really hot. Sear the steaks on both sides for 2 min. per side. Then put the skillet in the oven for about ten minutes so the inside gets cooked. That's how they do it in restaurants. It HAS to be a cast-iron pan. Also let the steak rest for 5-10 min. before you cut into it or the juices will all run out and the steak will be dry.

I would consider cooking them close to 10-12 min. per side depending on how thick they are. cook them on a lower rack of the oven and broil them..... that makes the best steak cooked inside and your husband will love it.

the grill pan may solve your problems I wouldn't keep them in the marinade a really long time a couple hours max maybe even just one hour,However if you hav an electric stove try using your top broiler for 5-6 min on each side, also stad them a bit with a fork goodluck btw A1 has some great marinades their ny steakhouse one is my fav.

Mr. Knowitall has the right answer. Well seasoned cast iron skillet. Pan sear! Rub with oil first. Salt and pepper. NO MARINADE Unless you were trying to BBQ the rib eye--travesty! Finish in oven and let rest. Slightly firm in the middle when pressed with your finger=med. rare.

i don't like to marinade mine either, however, i do like to season mine with black pepper, plenty of garlic, olive oil and some salt. before cooking the steaks, make sure they are room temperature. lightly spray the grill pan with olive oil. let the pan get really hot (i like to use cast iron) and sear the steaks on both sides on high heat. then drop the heat to low and and throw in some sliced onions. put a lid on it and let the steak continue to cook to the desired doneness you like. wait 10 minutes before cutting into the meat.

when I worked at the tavern, cooking on the hot side; a great way to tell how done a steak is, is with the tendons in your thumb. Now look at your left hand, touch the tip of your thumb to the tip of your pointer finger; the section of your hand between the base of your thumb and basically the base of your entire hand, there should be a rather fleshy part of your hand, OK. When you touch your thumb to your pointer finger, thats RARE. Touch your thumb to your middle finger, thats MEDIUM RARE. Touch your thumb to your ring finger, thats MEDIUM WELL. Touch your thumb to your pinky, thats WELL DONE. Compare the tension you feel under the base of your thumb to the feel of the steak while its cooking. This helped me to get better at cooking their NY Strip steaks!

If the grill pan solutions don't solve your problem, another idea may be to invest in a George Foreman grill. It has solved my steak cooking problems in the past.
