Answer:
First you cut potatoes up in strips not to thin. You can leave the skins on or off your choice, I think that they taste great with the skins on also.. Use 100% canola oil. If you have a deep fryer use that, they turn out better this way. Eat and enjoy..

It's easier than you probably think :) Wash your potatoes under cold water and then remove the skin. Next slice up your skinned potatoes any way you like (thick, thin, lengthwise, etc). In a deep skillet (doesn't need to be a deep fryer, a skillet with high sides will do) heat up vegetable oil or peanut oil is very yummy :) Once the oil is HOT put in a few of the potatoes and let them fry until golden brown or whatever brownness you like. Remove the potatoes and place them on a paper towel to drain the excess oil. Then... invite me over to help you eat them :)

dont use neither oils...you need to cut them into french fri shapes and then deep fry them in a fryer using crisco..then season them to perfection oil needs to be 350 degrees and then cooked until perfection..

You should use vegetable oil, olive oil would be disgusting. I just slice the potatoes like matchsticks and put them in a preheated oven at 400 degrees (tossed in oil, of course). Every 10 minutes I take them out and shake them around to make sure they are crispy all around. Experiment with the type of potatoes, you'll get different results for each type. Not all come out crispy.

O.k. you definitely do not use olive oil because it smokes when heated at a high enough heat to fry. Peanut oil is the best oil to fry in but vegetable oil will do just fine. If you have a Fry Daddy fryer, they will turn out perfect because the heat is controlled for frying at the appropriate temp. If you have a deep pot that will suffice. You can use any potato but Idaho is my favorite. Cut your potatoes into which ever shape you prefer. Heat your oil on med-high until when you put a fry in, it bubbles. you want to use about two cups fries to three cups oil. When they turn the color you desire, use a metal slotted utensil to scoop out onto a paper towel to drain. Season as you wish and enjoy!

Chips. 2kg Large potatoes, peeled. Vegetable oil for deep frying. (I) Wash or soak in cold water and thoroughly dry potatoes and cut lengthways into 10mm sticks. (II) Heat oil and lower chips into the pot a few at a time into moderately hot oil. Cover and cook for about 4 minutes, or until pale golden. (III) Remove and place on paper towels. Repeat with rest. (IV) When ready to serve reheat oil, and cook again in batches, until crisp and golden. Drain on a paper towels. Note. Potatoes needn’t be in sticks and at the end of step 2 they can be stored refrigerated several hours ahead or wrapped and frozen. Vegetable oil will be fine.

Actually corn or other vegetable oil is better better because it does not smoke or go rancid when you heat it as bad as olive oil does. The true french fry is sliced in strips (frenched is a style of cutting) and fast fried in hot oil (about 375 degrees Fahrenheit) You need something you can heat the oil in. There are many small deep friers available that regulate the temperature. This is important. It is too easy to start a fire if you try heating oil on the stove top in a pot. Another way is to turn the oven on broil, spread the potatoes on a cookie sheet, oil them lightly and broil them to golden brown. It is a safer method than deep fry..

You cut potatoes up and cook them. I would use vegetable oil like canola oil or peanut oil, because olive oil has a low smoke point
