What can I do for Easter?

What can you use leftover Easter eggs for, other than egg salad?

  • We always have a lot leftover, and my roommate always makes a ton of egg salad with them, and I am expected to accept this as my apportionment of food for awhile, as I am a vegetarian(I try to eat mostly vegan, but know I will have to face the Easter eggs), and she is not, plus, she does the cooking. She is the one who makes all the Easter eggs anyway; why, I do not know, other than for the enjoyment of it, I guess, and to have some to give to company that stops by. Any suggestions on what I can have her make with them other than egg salad?

    You could just talk her into filling plastic eggs with candy instead. That's what I always do. If not, here's a recipe that I like because I love avocados. Avocado and Egg Pâté Serve with crispy crackers or fingers of challah bread. INGREDIENTS: Large bunch of parsley Small bunch of spring onions (scallion) bulbs 4 ripe avocados 1 tbsp lemon juice 4 hard-boiled eggs, halved 1 tsp salt 10 grinds of black pepper 1 rounded tbsp mayonnaise PREPARATION: Chop the parsley and the spring onions finely in the food processor. Add the peeled, stoned and roughly cubed avocados and the lemon juice, then add the hard-boiled eggs, salt, and pepper. Pulse until the hard-boiled eggs are finely chopped. Turn into a bowl and add enough of the mayonnaise to bind the mixture into a pate. Taste and re-season if necessary. Pile into a shallow bowl and chill until required. Serve with scoop crisps or spread on fingers of challah. Yield: 8 servings as a starter, 12 as a dip

DEVILISHLY GOOD DEVILED EGGS AND VARIATIONS 12 large hard-boiled eggs 1/2 to 3/4 cup mayonnaise, as needed 2 teaspoons yellow mustard or another mustard of your choice 1 teaspoon salt 1/4 teaspoon Tabasco sauce Sweet paprika, for sprinkling Cut the eggs in half lengthwise, carefully remove the yolks and put them in a medium-size bowl. Set the whites aside. Mash the yolks, then add 1/2 cup of the mayonnaise, the mustard, salt and Tabasco, and stir to blend. Taste and adjust the seasonings if necessary; add more of the mayonnaise if needed to get the consistency and flavor you want. Fill each egg white with 1 tablespoon or so of the mixture so it is nicely rounded. At this point, you can cover and refrigerate overnight. Sprinkle with paprika before serving. Serve chilled. VARIATIONS: SHRIMPLY DEVILED EGGS: Add 1/2 cup of chopped cooked shrimp and 2 tablespoons of chopped fresh dill. GREAT CAESAR'S EGGS: Omit the mustard and add 1 to 2 teaspoons of Worcestershire sauce and 2 to 3 tablespoons of freshly grated parmesan cheese. Sprinkle the eggs with ground-up garlic croutons or more grated parmesan instead of the paprika before serving. HAM AND EGGS: Add 1/3 cup finely ground smoked ham to the filling. SOUTHWESTERN EGGS: Omit the mustard and add 2 tablespoons of finely chopped fresh cilantro and 1 to 2 tablespoons of salsa, to your taste. Top each deviled egg with a tiny dollop of sour cream and sprinkle with chili powder instead of paprika if desired.

I would say make deviled eggs, those are good. You could also use them in tuna or on top of a salad.

Send them to me where I shall keep them in a warm place and have something impressive to throw at the kids that get near my flowers this summer. It doesn't hurt the kids, but by July the eggs will smell as bad as skunk spray!

They don't need to be put in anything to eat them.

My Recipe for deviled egg filling rocks 12-18 eggs 8 oz cream cheese 1/2 cup Ranch Dressing 1 tsp each of dill & sweet salad cubes. I make this up & since I rarely eat eggs I give these away to friends or elderly neighbours for thier Sunday dinners ((MyJack))
