It really depends on your interests. What do you enjoy more, English, history, the arts? In my opinion, the history classes, especially American history are the easiest, but that's because I enjoy history ;)

That completely depends on the instructor. We can't help you. Just because something is 100 level doesn't mean it's easier, it just means it's introductory. Take whatever interests you.

I took world religions which was pretty easy and interesting. and i took art history: renaissance to modern art and my art teacher also taught history of photography and said it was a nice class. i really wanted to take it but didn't have time. anyways, it depends on your interests and the teacher. pretty much all the classes i took were very interesting and also easy. you just have to see what you think is fun and when it comes to picking an easy teacher use ratemyprofessors.com and arrange all the teachers in your school by easiness and pick the top ones who teach the subject of your choice. (that's kind of what i did. When i didnt know what class to pick, i just picked the easiest teachers in school and signed up for whatever class they were teaching)
