How to wash dishes and clean a kitchen in a restaurant fast?

• a few months ago i started a job as a dishwasher...i am slow to learn things and i am still slow at doing the dishes and cleaning the kitchen after the cooks leave...i got in trouble today for being too slow...i really need suggestions on how to be faster...how i do it now is i wash/rinse the dishes first then put them in the dishwasher. at most times i have the next load ready to go in as one is washing in the dishwasher and i am drying and putting away the clean dishes...anyways i am usually in trouble for being too slow and i need to improve my speeds and get done fast...also after the cooks are gone i must sweep and mop the entire kitchen, gather up and take down garbage and recycling..i must get this all done in approximately 4 hours or less, last night we had 50 customers and i started out with a whole pile of dishes when i got in...i just need suggestions on how to be faster.

  Ok work on the priorities. The big thing is to make sure there are clean dishes put away so they have them when they need them. The sequence you should use is to work backwards. If there are dishes that are out of the washer and not stacked, do that first. If there are no dishes available, do a quickie batch by grabbing enough dishes (and other stuff) to hold them off and run them thru the washer. As soon as they are out, stack them. While you are waiting, I would go and start staging the washer for the next batch. Rinse only those that are too dirty for the washer to handle. If you are behind, grab the dishes that you don't have to rinse to get the next batch ready. Finally concentrate on those dishes, glasses, etc that need more rinsing or attention to get all the gunk off of them. Bottom line is to keep moving and try to keep some dishes stocked as best you can. Also with careful planning, you can often get more dishes in each batch. z
