    I am a former chef from Canada, and I have a number of UK chef friends I worked with internationally when in the Hotel business, unlike the US and Canada, there pay structure is based on experience and training plus Guild certifications, so restaurants pay less than Hotels, Resorts or Holiday camps and Pensions pay slightly more as they are seasonal, fast food is like the US. A Line cook/Chef du Partie will make 300-400 quid a week, a Sous chef 400-600 and a Head/Executive Chef even more, commis, demi chefs and prep chef will be the lowest of the chain/brigade. And most work split shifts, in for lunch back at 4-5 for dinner set up and closed by 9:30-10 pm I have a friend in London at the Dorchester and one in Liverpool who runs a 75 seat Euro/Asian bistro, they are paid and pay quite well, one reason is an apartment/flat or rental/price of a home is 2-3 times the price of one in Canada or the US, gas/petrol is 2-3 times to, food is cheaper now they have the EU market structure, but public transit, booze and other luxury's are not chap, even a burger at McDonald over there is quite a bit more, so they pay more for everything mostly
