High end restaurants in the US will operate on one of two models: 1) A complete pooling of tips by waitstaff and FOH employees who get a full cut (5 servers and 2 FOH employees (usu. runners) make $1400 in tips in a night...$1400 into 7 is $200 per person). 2) Each waitron keeps their own tips and gives runner a cut. Amounts can vary widely; figure they're getting 18-20% (or more) of a tip.

Tipping in general is a sore spot with me. I think it should be included in the price of the item, not something that is somewhat like a hidden charge for eating out. We do not tip the funeral director. We do not tip our pastor after a sermon. We do not tip the doctor after an office visit. We do not tip Jay Leno after a good TV show. The entire system of tipping needs to be reworked.
