How to prepare sushi?

Is it "kosher" to ask a sushi chef to prepare your sushi rolls according to your nutrition needs?

  • i am wondering if i can request things like less rice, or low fat mayo or no mayo on my sushi rolls, or is that considered "not cool"? i love sushi, but i don't necessarily want the amount of rice or sauce they put on. i also don't want to insult the chef! does anyone have an opinion?

    You can ask for any revisions (no sesame seeds or substitute carrot for cucumber and so on) if you are having it custom made. Since sushi is mainly rice which is a starch and full of carbs I don't use sushi and nutrition in the same sentence. The little bit of fish or vegetables is overwhelmed by the rice.

I'm thinking that the chef will probably be weirded out if you ask for less rice, because rice is on every sushi roll and the chef probably has an approximate amount that goes onto each roll. They'd never do it in New York :). But if you live in an area where people are nice, maybe he/she will. The sauce however, the chef will probably be nice about. I have asked for custom sushi rolls before and chefs don't really care, so I don't think they'll mind if you ask for no sauce...
