How to prepare a good interview?

How do I prepare for my upcoming interview as a waiter?

  • I have an interview this coming weekend at a moderately up-scale American bistro and want to know what I can do to prepare myself for the occasion. While I have experience working in "nice" restaurants, I have spent the last four years working at Chevys, which is about one step above Taco Bell, and want come across as competent during my interview. Here are some of my problems: I have very little wine knowledge, which they expressed was essential in my first interview. I am completely out of touch with working under professional conditions (Chevy's is a complete mess and always seems to be on the verge of total chaos), and need to know what the working environment is like in a "normal" restaurant. I feel like I may be out of touch with some of the subtle qualities possessed by professional servers (how to approach guest, how to serve wine, when to take away plates, etc). My interview is this Saturday so I sincerely appreciate all advice.

    If they require a knowledge of wine this will include how or what to recommend to diners etc. white with fish, red with beef etc, names of wines and champagnes from good to the best and how to open the bottles and serve at table side. (You will have to carry an opener with you at all times). Prebussing a table should be done after each course but diners do not want you to run immediately over as soon as they are finished. A drink order is usually taken after the guests are seated and it sounds like you will have to recommend a wine. Don't let this scare you. If management is impressed with you during the interview and you are honest with them about the amount of knowledge you have regarding wines, they may agree to train and let you learn more as you go. I have worked as a server from Denny's to an upscale 5 star restaurant and my most important attribute is that I was willing to "learn", on time, well groomed, polite and organized, a must for any good waiter or waitress. You have been given excellent advice. I just wanted to add, don't sell yourself short. You have experience. If you can work in chaos, you can work at an upscale bistro. Continue to be attentive to your customers. I might suggest you read up on wine. Get a general feeling for the subject. Don't "cram". Just read up on it and be honest with your interviewer. You will be fine! Hope you get your new job!
