I had lunch at this great little Greek place in town and I wonder what kind of rice is commonly used at Greek restaurants.

Rice (GRK: ρύζι) is indeed a much-used ingredient in Greek cooking: in pilaf, stuffings (most notably for grape leaves and vegetables), puddings, casseroles, and soups. Greek cooks use all sorts of short and long grain, converted, brown, wild, and instant rices, however most traditional dishes call for short grain rice.
