Wow... I don't know about these other answers! (No offense, but you do NOT take a date to a buffet if money is no object.) Delmonico Steakhouse at Venetian is one of the best steakhouses around. Cafe Bouchon, also at Venetian is fantastic French food. Andre's at Monte Carlo is another outstanding French restaurant. Top of the World at Stratosphere is at the top of the Stratosphere tower, as the name suggests and offers an unparalelled view of the city. Restaurant Guy Savoy, at Caesars, is reputed to be one of the best restaurants in the country. I wouldn't know because it's super expensive to eat there... as in dinner for two could easily run you $500 to $1000.

For a nice date out, try Mon Ami Gabi at the Paris Hotel while in Vegas. It's not overly pricey (probably under $100 for two), but very romantic. Not to mention, if you are able to grab one of the coveted outdoor seats, you will have a magnificent view of the Bellagio water show across the street. Highly recommend!

I have dined out in vegas quite alot and honestly my most favorite place is The Spice Market Buffet in the Planet Hollywood resort and casino. It is set up with stations from around the world including Asian (delicious sushi), Italian (pastas, pizza's, you name it), Mexican (tacos, burritos...) and much more. The dessert sation is to die for. The pastry chef makes you caramel apples when ordered and cotton candy! You must visit...i sometimes just go to vegas for it. Buon appetite!

for a late night drunken binge go to Carnigies!! They are located in the Mirage by BTK and their burgers are the best in the world. They run about 15-20 bucks just for the burger but it is worth $50 to me. I have ate at a lot of fine dining establishments in Vegas and Carnigies is probably better than a lot. Avoid Stack at the Mirage, its not that great. Also Lawyres off the strip (like the seasoning) has the best prime rib..

Try Memphis BBQ. It's a really nice place with lots of goodies like iced teas is giant mugs and nila wafer banana pudding. Hot pot bbq would be kinda cool. You'd be busy making your food so you'd intereact a lot. Try Swish on W. Sahara. How about Grand Luxe at the Venetian. It's the sister restaurant to the Cheesecake Factory and has a nice ambiance.

you can go to the rio's seafood buffet the MGM's buffet the orleans hotel has a good prime rib loft if your old enough to drink then theres happy hour at the orleans hotel don miguels also the on strip hotels like excalibur luxor and paris
