One single coil pickup on guitar?

i am building a guitar for a class and was wondering if i could just wire one single coil pickup straight to the guitar output jack, avoiding volume and tone knobs.

I'd agree putting in volume control is not complicated and you would still need some type of voltage regulator for volume so you might as well make volume controllable with a simple potentiometer.
