It takes a bit of specialization to get the knowledge necessary to work at either or those jobs. To be an agent, you'll need to take some training on the types of insurance you might be interested in. You will need to be skilled in financial planning for your clients. On the adjuster side, you will need skill in determining losses which could mean you need to know something about fixing homes and cars. Either way you'll need to pass a test to get your license and that will take some training.

This goes for Health & Life Insurance - in Virginia, at least. I took an exam at a testing facility contracted by the state. It consisted of 100 knowledge questions, related to different aspects of health & life insurance. You don't have to, but I recommend taking a prep course of some type if you don't have an extremely detailed history in the insurance industry. Once you pass, and the state grants you a license, you must obtain at least one appointment within 6 months. An appointment is when a company identifies you as their agent, pays an appointment fee, and registers you with your respective state.
