Are we able to go and take the license plates off of the vehicle? What legal routes can we take?

Answer:
http://www.dot.state.tx.us/services/vehicle_titles_and_registration/vehicle_titles_alert.htm read it. Download the form you need here: http://www.dot.state.tx.us/txdoteforms/GetForm?formName=/130-U.pdf&preference=PDFForm&appID=/vtr&fileID=1233334&status=/reportError.jsp&configFile=WFServletConfig.xml Once you have filled it out and filed it with Texas DOT through the county tax office, you will have no further worries or obligations.

You need to notify the DMV ASAP! It can all be held on you if the other person gets in an accident, kills someone or whatever. You could lose everything! Call the cops or something that is very important and I would wonder why the heck they wont transfer title?
Legally, you can contact the dmv and tell them you sold the car. From that date, they give the transferee 60 days to register the car before fining him. Also, if he gets pulled over after those 60 days, he can get in trouble for it.

well the only thing that u can do is take them 2 court and sue them as long as u have documents stating that the car is no longer in your possession then they will make that person put the title in their name
TTC Baby #1 again!!!!!
you shouldnt have left the plates on the veh to begin with. legally the car is still yours and chances are if he hurts somebody or does property damage with the veh, because the plates are still in your name, you could be held liable. call the police and file a report to cover your ***..ets. and yes PULL THOSE PLATES!!

Check with County Tax Assesor-Collector and inform them of the sale or else you are going to get the tax bill till he does transfer ownership.
