in 3/4 the beat is usually the quarter note. so 3 triplet 8ths fit evenly into one beat. in 3/8 time, a dotted quarter takes up the whole measure the beat could be the 8th note, in which case a dotted quarter gets 3 beats in a fast tempo though, sometimes you will feel the whole measure as the beat, so then a dotted quarter gets 1 beat (still having 3 subdivisions) in 6/8 the beat is usually a dotted quarter. a quarter note will take up 2/3 of that beat. or you could think of it as getting 2 of the 3 subdivisions within that beat. even if 6/8 goes slow enough that you are in 6, there is still a secondary strong beat on the 4th 8th note, 3 quarter notes will fit into a measure of 6/8 but the 2nd and 3rd ones will not be on the strong part of the beat. a common rhythm in 6/8 is a beat that goes "quarter 8th" because that fills up a complete beat with a "long ___ short" feeling.
