Madden: How do you create a Fantasy Team?

I have Madden NFL 08 for PC. I'm new to Madden, I used to play ESPN NFL Football. On ESPN NFL Football, gamers are able to create a (Fantasy) team (logo, name) and then ADD real NFL players (no contracts, salaries, or draft all WITHOUT REMOVING THE PLAYERS FROM THEIR ORIGINAL TEAM). It seems like on Madden, you are given fake players when you create a team, and you have to draft players and there is a salary cap and other annoying restrictions. Is there any way to simply add and delete players to your team without worrying about salary caps, trades and removing them from their real NFL team? Basically, a fantasy team but where I get 53 draft picks in a row. I'd like to play exhibition games with this team.
