How does the Key Signature Calculation Method work?

If you're looking at this question, you probably know what the key signature calculation method is. I won't go into detail about that. You can basically take math and calculate the amount of sharps and flats of a key signature. However, I am curious, why does that work? Why is it that by simply adding 7 to a base note, you can get the amount of sharps in the sharp of that note (i.e. C to C#). Can anyone help me?
