Calculating rate of reaction, and then presenting the processed data in a graph (catalase/hydrogen peroxide)?

I've done the typical "investigating enzyme concentrate on the rate of reaction of catalase using hydrogen peroxide" experiment and changed the enzyme concentration by using lots of different tissues (liver, kidney etc) to determine which one had the greatest amount. Thanks. Now I am presenting my data. My raw data is in a table and now I need to work out the rate of reaction for each tissue. I have timed the reactions over 2mins. Do I need to present my rate of reaction as oxygen produced/2mins ... or work out an average and do oxygen produced/min?... I can see the latter as being slightly misleading as the oxygen produced different dramatically between the first and second min. Also, I need to put my data into a graph. Initially I was going to plot my raw data, and do a graph for each tissue so they could be easily compared but apparently I can only plot processed data. The only thing I can think to do is plotting a bar chart which compares the rates of reaction for each tissue. Is this correct or is there a better method?

Answer:
Bar chart seems fine - put both the the rates in (Per 2 min and per min) - this will give you the chance to discuss any differences between the two rates in the different tissues.
