    Because the most basic sciences(physics and chemistry) are governed by laws which are logically consistent with themselves and their components can be quantified. So this leaves predictability of natural events most readily leveraged by "functions and relations" and "stuff". And when you can make predictions about material and make stuff with the material and make it do what you predict, you've got engineering and technology. Then you can make survival stuff and fun stuff. Furthermore, the flow of money is described by functions and relations, so those who are good at using functions and relations tend to make money so they can buy stuff. Are you made of the right stuff?

So, if you want not to understand the world you live in and work in a Mc Donalds the rest of your life without having a clue as to why your boss makes money at wall street while you lose all your savings each time your try it, then don't study them : they would be completely useless to you.

if you ever wanted to find the link between what you started with and what you end up with, function is exactly what you need. relations however, wont give you that, but if you have two different functions but have a relation between them, then you wont need both functions, a relationship could simplify them!
