This is actually a pretty complex question with a complicated answer. First off, let's go over the impact theory. The idea is that, in the early formation of Earth, a Mars sized object impacted Earth. When this happened, the core of the impactor went through the mantle and actually got transferred to the core of the Earth. The mantle of the impactor was flung off and it is this residual piece which is thought to have created the Moon. The impact would have been an extremely energetic and hot event, so that when the impactor hit earth and flung off, any volatiles contained in or on it would have been vaporized and left behind to settle on the Earth. Now you might ask, why couldn't the Earth have just captured a volatile-less object. The thing is, any object which either impacted or was captured by the Earth had to have formed around the same distance as the Earth in order to interact with it. This means it was inside the frost line and any such object would have to have water on it during formation. So it would not be possible for the Earth to catch an object with no volatiles. The fact that there are no volatiles supports the idea that they were vaporized from an impact.
