The field of hydroponics (growing plants in water) is an exceptionally interesting one, and potentially very useful (space travel, multi-tiered greenhouses, etc.) It would be interesting to also compare which types of plants thrive in all water versus soil. Overall, excellent idea.

I think it depends on whether or not your teacher wants a complicated Science Fair experiment from you. If you choose one that isn't hard, but you do a good job on it, I think that you can get a good grade on it. I am doing a simple one, but I think I'm going to have a lot of fun experimenting with it!
