Changing jobs - overlapping end/start dates?

I am on the brink of switching jobs to a new company, and have about 3 weeks vacation left with my current company. I plan to start work for the new company for one week (while on 1 week vacation from my current company), and if it is definitely what I wanted at the end of that week, only then give my old company the courtesy 2-week notice and continue working with new employer while the old company is paying me vacation time for the remaining 2 weeks of vacation. This way, I can still retain my old job should I decide the new company is not a good fit for me. Of course, should I choose to commit to the new company, I also pledge to give my co-operation to help my old company transition/train replacement staff outside normal business hours. Q1 Has anyone done similar before ? Q2 What are the legal implications ?
