How can I set up a proxy email address?

I want to set up two email addresses. One that I will sign into (primary address) and one that will route emails (proxy address) to my primary address. So, people would email my proxy, which would then forward the email to my primary, keeping my primary address anonymous. Does anyone know how to do this? The reason I want to set up this email system is because email addresses pretty much always get sold out to spammers and advertisers. Also it would allow for various proxy addresses that would be forwarded to a primary. For instance, you give out one address to friends and one email to business people and one to store accounts. Anybody know how it's done? Thanks for the help
