Are under 18s camps ALWAYS in summer?

After school this year, I'd like to go to camp in Italy, then in France, but all camps seem to be during summer only, and I can't go to two camps in one summer. Are there any camps that don't just open for summer, that you know of? :)

Kids are in school most of the rest of the year. which is why camps are during the summer.
