How can you lock folders with a password in Vista?

Password lock files/folders and delete originals.?

Sup I'm turning my computer in at service and I want to password protect my folders and files so they can't reach them. Last time I did it and I removed the original files it didn't let me get to my files probably because the original files were deleted, but I mean what's the point of password protecting files if you can see the originals? So does anyone know how I can password protect my folders and files then remove the original files completely and that I still can reach my locked files then maybe restore them when I got my computer back? Thanks in advance Peace.
