Ideas for kid friendly vegan meals?
-
I am trying to transition into a more vegan diet for my family. This week I've made chili, burritos, bean salad, I intend to get down to 5 vegan meals a week with the exception of chicken and fish a couple nights a week. We have laying hens so eggs are on the menu as well as cheese for now. I know I can google recipes, just thought other parents might know some vegan meals kids are more likely to eat.

she's not saying she's a vegan, she's just trying to get more vegan meals into her families diet! here's some ideas -- lentil salad or lentil soup. salads throwing lots of veggies together -- corn, tomatoes, onions with a bit of olive oil and pepper...cucumbers, onions, celery, olive oil and lemon juice...etc. beans with onions (can you tell I like onions? hm) and red peppers.. we made a bazillion different combinations of veggie salads last summer when everything was fresh. guacamole or salsa with corn tortillas or corn tortilla chips. you could do a quesadilla with beans and the salsa between two tortillas -- sear it in a pan on both sides until it all sticks together. do you do tofu? veggie stir fry -- be careful with the sauces though (some have fish or eggs in them) -- but rice with lots of veggies and pieces of tofu. we like those fake meat things too -- the fake nuggets, the fake hamburger meat -- you could do sloppy joes with the fake hamburger or some sort of tacos with those.

You do realize that a vegan is someone who doesn't eat or have anything that comes from animals right? You can't be a vegan and still eat chicken and eggs. As for the meals well try something that looks more appealing to kids, not something that looks like fish food.
Eggs aren't vegan.
We are vegetarian and do some vegan meals as well. My kids favorite foods: Whole grain pasta with marinara sauce Fruit salad Veggies and rice Mexican foods - tacos/burritos you can make either with no cheese or vegan cheese. We do beans and/or soy crumbles instead of meat Peanut butter and jelly (the staple, lol) Morningstar farms Chik'n nuggets Boca Burgers 4 bean chili Another thing we do a lot of are "snack plates" - whole grain crackers, fruit, fresh veggies, etc. Simple, easy, and healthy for lunches. Would your kids eat hummus? It's good to dip fresh veggies in.
If you're including eggs & cheese, then you're looking for lacto-ovo vegetarian, not vegan. In our house, we tend to cook meals with a ovo-vegetarian base, serving the meat & cheese on the side for those who want them. I'm lacto-ovo veg. My son is allergic to cow's milk. So, this work out best for us. Some favorites that you didn't mention are... Tacos (especially Spaghetti tacos for your I-Carly fans) Pizza (make individual pizzas w/pillsbury dough, homemade dough or tortillas for the crust - let the kids fix them how they like them) Pasta of all kinds Homemade soup & bread (easier than you think, if you google '5 minute artisan bread technique') Rice, egg rolls (home-made (look for easy kid-friendly recipe on familyfun.com) or frozen), sauteed veggies
I have never done it myself but I have heard Vegan Lasagna is good and that kids love it. Vegetable soup with a tomato base, my kids love broccoli w/cheese and rice, or potato soup.
What about fruit salad? For a dessert, cover the fruit in chocolate syrup. Sushi? Tofu? Veggie burgers Veggie hot dogs.
Vegans do not eat cheese. Just might help you to get your wording right when using google. I also suggest posting this in the vegetarian and vegan category. You will probably reach a wider base of people with these interests than you will here.
