Whats not good for horses?

Chicken bones have salt on them from cooking. The salt combined with the fact horses will chew on anything hard, even small stones, is why your horse is chewing them. Bread is just baked wheat, a form of grain. It is good for your horse. Things soaked in chemicals are not good for your horse, nor are meat products. Generally if it is bad for your horse, the horse won't eat it. Keep in mind the wild horses in the deserts of the west live on bark, sage brush and almost no grass or grains. They multiply like rabbits and have to be rounded up and thinned every so often so they don't over populate the deserts.

Breaking their legs. Most horses have to be shot if this happens.
