What is practical implementation of wireless ad hoc network?

We use an application at my work where the SQL files are located on one of the users computers and the rest of us connect to it over the network. In come cases, the client site where we are working won't allow us to connect to their network or use their internet connection. We set up a ad-hoc wireless network so that we can all connect to the main SQL computer. We also share a printer via this method when necessary as well as set up a file share so that we can all work on files which are stored on one of the comptuers on the ad-hoc network.

OK, so I'm on my boat in the middle of nowhere with no Internet connection. But I want my laptop to talk to my tablet, so I set up one as an ad-hoc wifi host and tell the other about it. Then I can run a webserver on the laptop and download maps onto the tablet. With the settings saved in both devices, it just works when I turn them on. In practice I need entries in the hosts file because there is no DNS (unless I run that on the laptop), or else I'll have to use numeric addresses or just click on icons in a GUI and who cares what daft addresses they use.
