How do I change the printing default using black print cartridge on HP 7310 printer?

How do I set the printing default on my HP 7310 printer for the black cartridge? The printer is connected to an Apple Mac. Each time I select the printing function it prints in colour unless I change the printer preferences for that job. The printer utility for the Mac is fairly basic and does not appear to give me the option for setting the default printer cartridge in the System Preferences menu. Trying to configure it via the printer help menu directly doesn't seem to work either as I get a message saying I need to install and run HP software on the connected computer. Thing is, I can't find any other printer driver/utility for the Mac other than the one I already have.
