They sell cables between the xbox and the monitor, go buy one
You can get video capture devices that plug into your USB ports, as well as cards for a desktop machine. I use a Hauppauge WinTV USB adaptor for my TV and one of their cards for satellite TV. You would want to get one of the Hybrid (analogue and digital) capture devices, so that you have a composite video input. However, connecting this way would reduce the picture quality. You may be able to find devices with other inputs, such as SCART, RGB or HDMI - these would be better. http://hauppauge.com/
