Your question will only get you other people's biased opinions when you ask "what's best". Only YOU know what's "Best for You". For un-biased(?) info, research Graphics Card tests and reviews online. Here's a good starting point:

The 4890, it runs GDDR5 which is the newest and the fastest speed 1 Gig > 896 MB The overclocking doesn't make any difference in this case. http://www.videocardbenchmark.net/high_end_gpus.html As you can see there, the 4890 is a step ahead of the 265. Also I have always felt ATI has a better picture quality than nVidia. Good luck and go with the 4890. PS- There is no reason at all the crossfire them. (Radeon 4850x2 is also very very good) Its a dual GPU card meaning pretty much 2 cards in one and if you crossfire them, it will be like a 4 way crossfire. Good Luck......

They both perform equally overall and trade blows with each other. But, it depends on the specific games you are gonna playing and your settings also as for example enabling AA gives ATI an edge over nVidia. If you are gonna crossfire/SLI, then I recommend 4890 as it beats GTX295 which is exactly two 275 slapped together. {source http://www.tweaktown.com/articles/2704/ati_radeon_hd_4890_in_crossfire/index12.html there are many other like this but couldn't find right now but there really are) Also, 4890 can be found for 20-25$ less than GTX275 if you shop around. Don't go for OC editions I recommend as they are priced much more than non-OC edition and if you want, you can overclock non-OC to levels even higer than factory overclocked ones. And i don't see the reason for you asking about a $280 card (the GTX275 OC) and a ~$230 card (the vanilla 4890)??
