    Unlike the above answer, you dont "get free apps" You unlock the iOS and it installs Cydia which is full of tweaks and settings. Tweaks as in changing the slide to unlock text, iPod text, font, colors, etc. You have alot more customizations than a stock iPod. You have to add a good ammount of sources to Cydia to have alot of stuff. There is a source that has "Installous" which is where you can download the free apps. But remember, its illegal. Jailbreaking is VERY simple. Youtube search "jailbreak ipod touch (your version here)" and it will bring up plenty of videos.

You might have to be a little techy but there is no damage if you know what your doing like you can get things for free apps and things that apple dosnt allow like sometimes backgrounds and applockers EXT but you might have to fix Ibooks and you might have crashes from poorly coded apps you can update apps and do everything fine.. its only Ibooks that you might not be able to open at first but you can download fixes for it also check out musicbox for 4g ipods, its awesome ;) to jailbreak search for the download for you IOS version.. you can find that in settings>about they are really good at making things user friendly from there on.
